  • beets
  • 1 c. vinegar
  • 1 c. sugar
  • 1 c. water (water beets were cooked in)
  • mixed pickling spice to taste

Directions

    Wash and cook beets in slightly salted water until skin slips off.

    Save the water beets were cooked in.

    Slip skins and slice beets.

    Cover with solution of vinegar, sugar and 1 cup of water beets were cooked in.

    Add mixed pickling spice to taste.

    Makes enough to cover inch and simmer 20 minutes.

    Put in hot jars and seal.
