- 1 (16 oz.) can sliced beets
- 1 medium sweet onion, peeled and sliced in thin rings
- 3/4 c. red wine vinegar
- 1 c. sugar
Directions

1Drain beets, reserving liquid.

2Add water to reserved liquid to equal 1 1/2 cups.

3Add sugar and vinegar.

4Mix well.

5Layer beets and onion rings in glass bowl.

6Pour liquid over them. Refrigerate overnight.
