Pickled Beets

   Cook beets

   tender; cool and peel. Heat vinegar and sugar until sugar is dissolved.

   Bring to a rolling

   boil.

   Add beets and pickling spice and bring to a rolling boil.

    Pack into hot jars and seal at once.
