- fresh beets
- 2 c. sugar
- 2 c. cider vinegar
- 2 c. water
- whole cloves
Directions

1Make enough liquid from sugar, cider vinegar and water until all jars of beets have been filled to very top and sealed.

2Wash beets.

3Trim off tops and roots.
-
4Place in large pot and cover with water.

5Cover pot and bring water to boil.

6Continue to cook beets until just fork-tender to center.

7Pour off hot water and add cold to cover.
-
8Change cold water until beets have cooled.

9If beets overcook, pickles will be mushy!

10Skin and slice cooked beets.

11Loosely fill sterile jars.
-
12Put 2 cloves in each jar. Boil together sugar, vinegar and water 5 minutes.

13Fill each jar with liquid; seal and process on rack covered with boiling water for 5 minutes.
