- 1 gal. beets, uncooked
- 2 c. sugar
- 3 1/2 c. white vinegar
- 1 1/2 c. water
- 2 cinnamon sticks
- 1 Tbsp. whole cloves
Directions

1Wash beets, leaving part of stem on top and also on bottom of beets.

2Cover with water and boil until tender, 20 to 30 minutes at full boil.

3Pour off water and drain.

4Cool with cold water.

5Peel (skins fall off easily).

6Slice beets.
-
7Mix together sugar, vinegar, water, cinnamon sticks and whole cloves.

8Simmer for 15 minutes.

9Then add beets and boil for 5 minutes on high heat, stirring occasionally.

10Pack beets in sterile jars.

11Pour same syrup over beets to fill jars.

12Seal.

13Wait about one week before serving.

14Yields about 8 pints.
