- 1 lb. fresh beets
- 1 c. water
- 1/2 c. vinegar
- 1 c. sugar
- 1 stick cinnamon
Directions

1Cook beets in 1-inch boiling, salted water for 30 to 45 minutes.

2Drain and cool.

3Peel and quarter beets.

4Combine water, vinegar, sugar and cinnamon in saucepan.

5Bring to a boil and pour over beets.

6Marinate several hours or overnight in refrigerator. Pour off part of liquid before serving.

7Yields 2 cups.
