  • 4 qt. beets
  • 3 c. vinegar
  • 2 1/2 c. sugar
  • 2 c. water
  • 2 tsp. allspice
  • 1/2 tsp. cinnamon
  • 1/4 tsp. cloves
  • 1 tsp. salt

Directions

    Cook beets until tender.

    Skin and slice.

    Combine rest of ingredients. Bring to a boil and boil 10 minutes.

    Pack beets in sterile jars. Pour boiling syrup to cover.

    Seal.

    Makes about 4 quarts or 8 pints.
