- carrots
- 2 qt. vinegar
- 2 Tbsp. whole cloves
- 2 Tbsp. whole allspice
- 2 qt. sugar
- 3 sticks cinnamon
Directions

1Remove skins; boil in water until slightly tender.

2Slice or leave whole.

3Pour syrup made of vinegar, sugar and spices (in bag), boiling, over carrots.

4Let stand overnight, then bring to boil and boil 5 minutes.

5Remove spices; pack carrots into clean jars.

6Fill to within 1/2 top of jars with hot spiced syrup.

7Put on cap; seal.

8Process in water bath for 10 minutes.
