Pickled Codfish

  • 1 (4 oz.) pkg. codfish, shredded
  • 1/2 c. rice vinegar
  • 1 c. water
  • 3 Tbsp. sugar to taste
  • 1 tsp. vegetable oil
  • 2 small Maui onions, sliced
  • 1 large tomato, sliced
  • 2 or 3 dashes Tabasco sauce

Directions

    Soak codfish in water for 5 minutes.

    Boil to soften for 5 to 10 minutes, then drain.

    Combine the rice, vinegar, water, sugar and oil, then add codfish to this sauce.

    Add the onions and tomato.

    Chill for 1 hour and serve.
