- 12 to 16 hard-boiled eggs
- 2 Tbsp. sugar
- 1 tsp. mixed pickling spices
- 2 c. cider vinegar
- 2/3 c. liquid drained from canned beets
- 1 tsp. salt
Directions

1Peel eggs and place in jar.

2In saucepan, combine sugar, salt, spices, vinegar and beet juice and bring to a boil; simmer for 3 minutes.

3Strain and pour over eggs.

4Put lid on jar and store in refrigerator for 2 days before serving.

5They will keep in refrigerator for several days.
