- 1 qt. red beets, drained (save juice)
- 1 (8 oz.) jar cocktail onions
- 2 doz. peeled, hard-boiled eggs
- 2 c. white vinegar
- 1 tsp. salt
- 1/4 c. sugar
- 1 Tbsp. pickling spice
Directions

1Put alternate layers of beets, eggs and onions into a wide mouth jar; to beet juice, add vinegar, salt, sugar and pickling spice.

2Boil 5 minutes and pour over eggs.

3Add enough water to completely cover eggs.

4Let stand a couple of days.

5Will keep several weeks in refrigerator.
