Pickled Fruit Compote Recipe

Ingredients

  • 1 #2 1/2 can pineapple chunks
  • 1 #2 1/2 can peach halves
  • 1 #2 1/2 can unpeeled apricots
  • 1 #2 1/2 can pears
  • 1 (8 ounce.) jar maraschino cherries
  • 1 1/2 c. vinegar
  • 1 1/2 c. sugar
  • 2 tbsp. mixed pickling spice tied in bag

Directions

    Drain fruit, reserving liquid from cherries.

    Combine the vinegar, sugar and cherry juice.

    Add in spice bouquet.

    Simmer 5 min.

    Add in fruit, bring to a boil and simmer 5 min more.

    Throw away spice bouquet.

    Serve hot or possibly cool.

    This looks pretty in a crystal bowl and enhances almost any ham, chicken or possibly turkey dish.
