- 18 fresh herring
- Bermuda onion
- 1 c. sugar
- lemon
- salt
- mixed pickling spices
- 1 pt. white vinegar
Directions

1Dress herring, removing head and tail.

2Wash well.

3Cut herring in 1-inch wide chunks and put in 1 gallon jar.

4Make brine of 1 cup salt to 2 quarts water.

5Pour over chunks and soak for 48 hours in the refrigerator.

6Next wash the chunks with fresh water. Drain.
