Pickled Okra

Ingredients

  • 2 lb. tender, fresh okra
  • 5 pods hot red peppers or green peppers
  • 5 garlic cloves, peeled
  • 1 qt. white vinegar
  • 1/2 c. water
  • 6 Tbsp. salt
  • 1 Tbsp. celery and mustard seed
  • additional bell peppers and sugar to taste (optional)

Directions

    Wash okra and pack loosely into sterilized pint jars.

    Put 1 hot pepper pod and 1 garlic clove in each jar.

    Bring remaining ingredients to a boil.

    Pour over okra and seal.

    Let stand eight weeks before using.

    If pepper pods are not available, use 1/4 teaspoon of crushed, dried
  7. 7
    hot red pepper for each jar.
