- 1 1/2 lb. pearl onions
- 2 Tbsp. pickling salt
- 1 1/2 c. white vinegar
- 1/3 c. sugar
- 1 tsp. mixed pickling spices
Directions

1Drop onions in boiling water.

2Boil 3 minutes.

3Drain.

4Place in cold water.

5Cut root end; squeeze stem end to remove onion skin.

6Combine 2 cups water and pickling salt; pour over onions. Let stand 12 hours.

7Drain; rinse thoroughly.

8Combine vinegar, sugar and pickling spices; bring to boiling.

9Pack onions into hot jars, leaving 1/2-inch headspace.

10Cover with pickling liquid, leaving 1/2-inch headspace.

11Adjust lids and process in boiling water bath (half-pints) for 10 minutes.
