- 10 medium or large perch
- 1 tsp. salt
- 1/2 c. water
- 1 c. white vinegar
- 1 1/2 Tbsp. pickling spice
- 1 medium sliced onion
Directions

1Fillet perch into 2 to 3 pieces.

2Put fish in a colander and steam for 10 minutes over boiling water.

3Bring remaining ingredients to a boil (pickling solution).

4Pour over fish.

5Place in jars and set to cool overnight.

6The longer the fish remain in the pickling solution, the better they taste.
