- salmon fillet, cut in small pieces about 1-inch x 1-inch x 1/2-inch (no bones)
- 1 cup water
- 1 cup vinegar
- 3 -4 tablespoons sugar
- 1 lemon, sliced thinly
- 1 onion, sliced thinly
- 1 tablespoon pickling spices
Directions

1Combine all the ingredients except the salmon.

2Bring to a boil.

3Let cool.

4Put salmon pieces in a glass dish one layer deep.

5Pour cooled brine over the fish and cover.

6Refrigerate.

7After a couple of days pack into jars.

8Best after 3 or 4 days.

9Keeps indefinately in refrigerator.
