Pickled Shrimp

Ingredients

  • 3 garlic cloves, chopped
  • 2 onions, coarsely chopped
  • 1/4 c. salad oil
  • 2 lb. deveined and peeled cooked shrimp
  • 2 thinly sliced onions
  • 1/2 c. salad oil
  • 3/4 to 1 c. vinegar
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. dry chili peppers or pickled peppers

Directions

    Saute the garlic, onions and 1/4 cup salad oil very slowly (approximately 10 minutes). Add shrimp to sauteed mixture.

    Cook slowly about 7 minutes, stirring frequently.

    Cool. In a bowl combine the remaining ingredients.

    Add shrimp.

    Push well down in the liquid. Cover and refrigerate for 24 hours. Serves 4.
