  • 8 c. sliced squash
  • 2 green peppers, chopped
  • 2 c. onions, sliced
  • 2 Tbsp. salt
  • 3 c. sugar
  • 2 c. vinegar
  • 1 Tbsp. mustard seed
  • 2 Tbsp. celery seed

Directions

    Mix salt with water and cover vegetables.

    Soak 1 hour, then drain.

    Combine sugar, vinegar, mustard seed, and celery seed and bring to a boil

    Add squash mixture and cook 5 minutes.

    Put in jars.

    Cover with hot liquid.

    Yields 4 to 6 pints.
