Ingredients

  • 8 c. sliced squash
  • 3 c. sugar
  • 2 c. onion, sliced and separated into rings
  • 2 c. vinegar
  • 2 tsp. celery seed
  • 2 tsp. mustard seed
  • 2 tsp. diced bell pepper

Directions

    Combine squash and onions, season with salt and set aside one hour.
  2. 2
    Drain liquid from squash and add vinegar, sugar, celery seed, mustard seed and bell pepper and bring to boil, adding the squash.
  3. 3
    Boil for approximately 2 to 3 minutes, place into hot jars and seal.
