- 9 cups water
- 1 teaspoon salt
- 2 12 cups rice
- 4 cups milk
- 1 cinnamon stick
- 1 strip lemon rind (3/4 inch thick)
- 1 12 cups sugar
- 6 egg yolks
- 1 teaspoon ground cinnamon, for decorating
Directions

1Fill a pot with water and salt and bring to a boil.

2Add the rice and let it cook for approximately 10 minutes, then drain.

3Meanwhile, bring the milk to a boil in a separate pot with the cinnamon stick and lemon rind.

4As it comes to a boil, add the drained rice.

5Cook over low heat until the rice begins to soften.

6Add the sugar, mixing well.

7Add the egg yolks, mix together quickly, then remove from the heat.

8Remove the cinnamon stick and lemon rind.

9Place the sweet rice into little serving dishes or one large one.

10Decorate with the ground cinnamon and serve once the rice has cooled.
