Pickled Squash

Ingredients

  • 4 qt. squash, cut thick
  • 1/4 c. salt
  • 6 medium onions, chopped
  • 3 c. white cider vinegar
  • 5 c. sugar
  • 1 1/2 tsp. celery seed
  • 1 1/2 tsp. mustard seed
  • 1 tsp. turmeric

Directions

    Sprinkle salt over onions and squash.

    Put ice on top.

    Let stand 3 hours; drain.

    Mix the vinegar, sugar, seeds and turmeric. Heat well.

    Add squash mix.

    Bring to a full boil.

    Fill jars and seal.
