Pickled Squash Relish

  • 8 c. sliced squash
  • 4 onions, sliced or chopped
  • 1 Tbsp. mustard seed
  • 1 Tbsp. celery seed
  • 2 bell peppers, chopped
  • 1/2 c. uniodized salt
  • 3 c. white vinegar
  • 3 c. sugar

Directions

    Combine squash, peppers, onions and salt.

    Cover with ice and water; soak 3 hours.

    Pour off water and rinse.

    Mix together vinegar, mustard seed, sugar and celery seed; heat until sugar dissolves.

    Add squash, pepper and onions; boil 3 to 5 minutes. Seal in hot jars.

    Great over beans and cornbread!
