Pickled Tomatoes

Ingredients

  • 2 garlic buds, quartered
  • 2 pieces celery
  • 2 small onions
  • 2 pieces green pepper
  • 2 pieces carrot
  • 2 qt. water
  • 1 c. salt
  • 1 qt. vinegar
  • 1/2 c. dill seed
  • 1/2 tsp. celery seed

Directions

    Boil water, salt, vinegar, dill seed and celery seed for 5 minutes.

    Pour over fruit and seal.

    Let stand 4 to 6 weeks.

    Pack jars and set in hot water before pouring hot solution in jar (prevents breaking and seals better).

    Fill with small or pieces of green tomatoes.

    Cucumbers can be used instead or mixed with tomatoes.

    A sprig of fresh dill can be used.

    Also, two hot peppers may be added if desired.

    Solution for 6 quarts.
