Ingredients
- 1 lb. zucchini
- 1/4 lb. or 3 small onions, sliced
- 1/2 c. vinegar
- 1/2 tsp. turmeric (optional)
- 2 tsp. salt
- 1/2 c. sugar
- 1/2 tsp. celery seed
- 1/2 tsp. dry mustard
Directions

1Scrub zucchini well; cut off both ends and slice thinly.

2Do not pare off outer green.

3Cover with cold water and salt.

4Soak for 1 hour.

5Mix all other ingredients; bring to a boil.

6Add drained zucchini.

7Turn off flame/burner; let stand 1 hour longer. Bring to a boil; cook for 3 minutes.

8Refrigerate in covered container.

9Serve as you would pickles.
