Ingredients

  • 2 cups plain flour
  • 2/3 cup shortening (I use cold lard)= 10 2/3 tsp.
  • 1 tsp salt
  • 1/4 ice cold water
  • 2 T sugar
  • Add, based on your preference and the type of filling, big pinches of:
  • ground cinammon
  • ground clove
  • ground nutmeg
  • ground cardamon

    In food prcessor, with sharp blade on, add flour, salt, sugar and whatever spices you choose (see ingredients)--process a couple of times to mix.

    Add lard in dollops shortening, and 2 tsp sugar. Pulse on/off till till mixture is a bit crumbly, like corn meal; then with machine runnning, pour in the 1/4 c. ice cold water (not the ice!) and pulse till ball just forms. take out and roll. This is enough dough for two crusts.
