Pierogi Lasagna

Ingredients

  • 12 to 15 potatoes, boiled and mashed
  • 3/4 lb. Cheddar cheese, grated
  • 4 onions, finely chopped
  • 1/2 lb. bacon, fried, drained and crumbled
  • 1 stick margarine
  • 1 c. sour cream
  • 12 lasagna noodles
  • salt and pepper to taste

    Cook noodles; put aside.

    Mash potatoes and add cheese to potatoes; beat, using a mixer.

    Add sour cream.

    Saute onions in margarine until soft.

    Add half of onions to potato mixture as well as bacon, salt and pepper.

    Place layer of noodles in 9 x 13-inch pan, then a layer of potato mixture.

    Repeat, ending with noodles.

    Top with remaining onions and margarine.

    Cover with foil and bake at 350° until heated through, 1 to 1 1/2 hours.
