- 1 pig stomach
- 1 onion, diced
- 2 stalks celery, diced
- 3 c. potatoes, diced
- minced parsley
- black pepper
- 1 tsp. salt
- smoked sausage
Directions

1Mix onion, celery, potatoes, parsley, pepper, salt and cut smoked sausage.

2Stuff pig stomach with mixture and close with cooking clips.

3Place stuffed stomach in a roasting pan with 1/2 cup water and bake, covered, at 350°

4for 2 hours.

5Uncover and bake another hour or until skin is brown and tender.
