  • 1 cup rice
  • 1/2 chicken chopped
  • 1 onion chopped
  • 5 carrots mediums, grated or finely chopped
  • 2 garlic cloves minced
  • 1/2 can tomato
  • 2 1/8 cups chicken stock or water
  • salt
  • pepper
  • 3 bay leaves
  • oil

Directions

    Heat up oil in a saucepan and fry chicken for 5 minutes.

    Then add onion, garlic, carrot, salt and pepper, bay leaves and saute for approximately 30 min.

    Add chicken stock or water, 1/2 can of tomato and simmer for a few minutes.

    Add rice and cook further 15-20 min or until rice is tender.

    Sprinkle with parsley on top if desired.
