- 1 cup rice
- 1/2 chicken chopped
- 1 onion chopped
- 5 carrots mediums, grated or finely chopped
- 2 garlic cloves minced
- 1/2 can tomato
- 2 1/8 cups chicken stock or water
- salt
- pepper
- 3 bay leaves
- oil
Directions

1Heat up oil in a saucepan and fry chicken for 5 minutes.

2Then add onion, garlic, carrot, salt and pepper, bay leaves and saute for approximately 30 min.

3Add chicken stock or water, 1/2 can of tomato and simmer for a few minutes.

4Add rice and cook further 15-20 min or until rice is tender.

5Sprinkle with parsley on top if desired.
