Pilau (Pilaf)

Ingredients

  • 3 lb. chicken or beef
  • 2 lb. Uncle Ben's rice
  • 1/2 c. chopped sweet peppers
  • 1/4 lb. margarine or butter
  • 2 Tbsp. Worcestershire sauce
  • 1 can pigeon peas, precooked
  • 1/2 c. chopped carrots
  • 1/3 c. cream of coconut
  • 1 chopped, medium onion
  • 1 clove garlic, crushed
  • olives and peppers (optional)
  • bay leaf
  • thyme
  • salt to taste

Directions

    Cut and season beef or chicken to taste.

    Soften peas; boil in water (add bay leaf and thyme for seasoning).

    In a deep pot, cook beef or chicken in the margarine or butter until brown, then add cooked peas, rice, coconut cream, carrots and all the other seasonings.

    Cover and steam until rice is cooked.

    Check periodically; add some hot water if necessary.

    When cooked, add chopped sweet pepper.

    Serve hot.
