  • 1 c. sugar
  • 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice
  • 1/2 tsp. ground cloves
  • 2 eggs, beaten
  • 1 2/3 c. evaporated milk
  • 1 1/2 c. pumpkin or squash
  • unbaked 9-inch pie shell

    Refrigerate pie shell.

    Heat oven to 425°.

    Combine sugar, salt and spices.

    Add pumpkin, milk, and eggs.

    Heat until smooth. Pour into shell.

    Bake at 425° for 15 minutes, then reduce the heat to 350° and bake for 35 minutes or until the custard is set. Cool.
