  • 3 boneless skinless chicken breasts
  • 8 tablespoons flour
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • kosher salt
  • fresh ground pepper
  • 10 ounces of a good quality chicken stock
  • 12 ounces button mushrooms
  • 9 tablespoons madeira wine
  • 4 -6 tablespoons heavy cream
  • 1 sheet ready made puff pastry
  • 1 medium egg yolk
