Pimento Fried Pork

- 1 kg pork (ribs/loin/belly fat etc)
- 4 tbsp pimento paste
- 1/2 tsp garlic salt (omit if you want to reduce salt)
- 1 cup lard
Directions

1Marinade the pork in the pimento paste and salt the night before cooking.

2In a large pot heat the lard on a medium heat.

3Add the pork and cook for about 20-25 minutes or until cooked through.

4Onced cooked you can serve with rice.

5I normally just have it with some bread.

6Let the pork cool down completely, then transfer everything in pot including the lard into an air tight container.

7Store in the fridge for up to 7 days.

8You can have small amounts as a snack.
