  • 1 1/2 c. crushed vanilla wafers
  • 2 Tbsp. sugar
  • 1/3 c. melted butter
  • 1/4 tsp. nutmeg
  • 1 c. toasted coconut, divided in half
  • 3 (1/2 pt.) containers heavy cream
  • 1 (8 oz.) can crushed pineapple, undrained
  • 2 Tbsp. dark rum
  • 1/2 envelope unflavored gelatin
  • 1/4 c. water
  • 1 (6 oz.) pkg. instant vanilla pudding

Directions

    To prepare crust, mix crushed vanilla wafers, sugar, nutmeg and 1/2 cup coconut.

    Add melted butter and mix well.

    Press firmly into a 9-inch pie pan and bake 10 minutes at 350°.
