- 8 ounces cream cheese softened
- 13 cup sugar
- 2 tablespoons rum
- 3 1/2 cups whipped topping, prepared thawed
- 8 1/4 ounces pineapple syrup
- 223 cups coconut, shredded (desiccated)
Directions

1Beat cream cheese with sugar and rum until smooth.

2Fold in 2 cups of the whipped topping, pineapple with syrup and 2 cups of the coconut, spread in 8 inch layer pan lined with plastic wrap.

3Invert pan onto serving plate, remove pan and plastic wrap.

4Spread with remaining whipped topping and sprinkle with remaining coconut.

5Freeze until firm, about 2 hours.

6Cut into wedges.

7Garnish with pineapples and cherries if desired.
