- 4 1/2 each flour, all-purpose
- 2 tablespoons margarine
- 3 tablespoons sugar
- 1 tablespoon sugar
- 1 tablespoon salt
- 1 each egg whites
- 2 each yeast, active dry
- 1 x water
Directions

1Mix 1 1/2 cups flour, 3 Tbs sugar, 1 Tbs salt and yeast.

2Heat 1 1/2 cups water and margarine to 120 to 130 degrees.

3Add to dry ingredients; beat 2 minutes at medium speed.

4Add 1/2 cup flour; beat at high speed 2 minutes.

5Stir in more flour to make a stiff dough.

6On floured board, knead 8 to 10 minutes.

7Set in greased bowl; turn to grease top.

8Cover; let rise in warm, draft-free place 1 hour.

9Punch dough down.

10Cover; let rest 15 minutes.

11In a large skillet heat 1-inch water over medium low heat to a simmer; add remaining sugar and salt.

12Divide dough into 12 pieces; shape 3 pieces into smooth balls.

13With floured finger, poke a 1-inch hole in each.

14Drop bagels into simmering water.

15Cook 3 minutes.

16Turn and cook 2 minutes.

17Turn again; cook 1 minute more.

18Drain on towels.

19Repeat shaping and cooking rest of dough.

20Place on greased baking sheet.

21Mix egg white and 1 Tbs water; brush on bagels.

22Sprinkle with coarse salt, sesame, caraway or poppy seed if desired.

23Bake at 375F (190C) for 20 to 25 minutes.

24Remove from sheets.

25Cool.
