Pine Nut and Basil Rice

- 1/4 cup pine nuts
- 2 teaspoons olive oil
- 1/3 cup long-grain white rice
- 2/3 cup water
- 1/4 cup packed fresh basil leaves
Directions

1In a 1 1/2-quart heavy saucepan cook pine nuts in oil over moderate heat, stirring occasionally, until golden, about 2 minutes.

2With a slotted spoon transfer pine nuts to a bowl.

3Add rice to oil in pan and cook over moderately low heat, stirring, 1 minute.

4Add water and bring to a boil.

5Cover rice and cook over very low heat until water is absorbed and rice is tender, about 18 minutes.

6Remove pan from heat and let rice stand, undisturbed, 5 minutes.

7Finely chop basil.

8Fluff rice with a fork and stir in basil, pine nuts, and salt and pepper to taste.
