  • 12 cup unsalted butter, at room temperature
  • 12 cup sugar, plus
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground fennel (optional)
  • 14 teaspoon salt
  • 1 large egg
  • 1 14 cups all-purpose flour
  • 14 cup pine nuts

    Toast the pine nuts until they are golden brown in a skillet over medium heat.

    Be careful not to burn them.

    Using an electric mixer, beat the butter and sugar until light and fluffy.

    Add the vanilla, fennel seed, and salt and beat for one minute.

    Transfer the dough to a sheet of plastic wrap.
