- 4 whole Boneless, Skinless Chicken Breasts, Cut Into Strips
- 1 whole Sleeve Butter Crackers, I Used Ritz (about 4 Oz. Sleeve)
- 1/2 cups Pine Nuts, Toasted
- 2 whole Eggs
- 1/4 cups Butter
- 1/2 cups Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoons Pepper
Directions

1Preheat oven to 375 degrees.

2Slice chicken breasts into strips.

3Add pine nuts and crackers to a food processor bowl.

4Using the knife blade, pulse for about a minute until crackers and nuts are a fine crumb.

5Pour crumbs into a shallow dish or pie plate and season with salt and pepper.

6Beat eggs in a separate bowl.

7Dredge chicken in egg and then in the crumb mixture, turning and pressing down to coat well on all sides.

8Place each coated piece on a baking sheet.

9In a large skillet, add butter and olive oil over medium heat.

10When oil is hot, add about half of the chicken.

11Cook the chicken for about three minutes per side.

12When each side of chicken is nicely browned, remove to a baking dish in a single layer.

13Repeat until all chicken is browned.

14Place chicken in the oven to cook for an additional 10-12 minutes or until chicken is cooked through.
