Ingredients

  • 1 lb beef sirloin steak, thinly sliced
  • 2 tbsp oyster sauce
  • 1 tbsp oil
  • 4 oz rice noodles
  • 1/2 None fresh pineapple, peeled, quartered, cored and thinly sliced
  • 1 None cucumber, chopped
  • 4 oz snow peas, halved diagonally
  • 1/3 cup honey roasted cashews, crushed
  • None None Basil leaves, for garnish
  • None None FOR THE DRESSING
  • 2 None limes, peel finely grated and limes juiced
  • 2 tbsp brown sugar
  • 2 None kaffir lime leaves, finely shredded
  • 2 tsp fish sauce
  • 1 None bird's-eye chili pepper, thinly sliced, plus additional, for garnish

Directions

    Combine steak, oyster sauce and oil in a large bowl. Season to taste. Cover and refrigerate for 10 mins.

    Cook noodles in a large saucepan of boiling water for 3-4 mins, until softened. Drain well and set aside.

    Heat a wok or large skillet on high heat. Cook beef in 2 batches, for 1-2 mins each side, until browned.

    For the dressing, whisk all ingredients in a small bowl.

    Toss noodles, pineapple, cucumber, snow peas and 1/2 the dressing in a large bowl. Just before serving, add beef and toss to combine. Drizzle with remaining dressing. Serve topped with cashews, basil leaves and additional chili pepper.
