- 1 lb beef sirloin steak, thinly sliced
- 2 tbsp oyster sauce
- 1 tbsp oil
- 4 oz rice noodles
- 1/2 None fresh pineapple, peeled, quartered, cored and thinly sliced
- 1 None cucumber, chopped
- 4 oz snow peas, halved diagonally
- 1/3 cup honey roasted cashews, crushed
- None None Basil leaves, for garnish
- None None FOR THE DRESSING
- 2 None limes, peel finely grated and limes juiced
- 2 tbsp brown sugar
- 2 None kaffir lime leaves, finely shredded
- 2 tsp fish sauce
- 1 None bird's-eye chili pepper, thinly sliced, plus additional, for garnish
Directions

1Combine steak, oyster sauce and oil in a large bowl. Season to taste. Cover and refrigerate for 10 mins.

2Cook noodles in a large saucepan of boiling water for 3-4 mins, until softened. Drain well and set aside.

3Heat a wok or large skillet on high heat. Cook beef in 2 batches, for 1-2 mins each side, until browned.

4For the dressing, whisk all ingredients in a small bowl.

5Toss noodles, pineapple, cucumber, snow peas and 1/2 the dressing in a large bowl. Just before serving, add beef and toss to combine. Drizzle with remaining dressing. Serve topped with cashews, basil leaves and additional chili pepper.
