  • 8 3/4 ounces rice noodles soaked in boiling water for 5-8 mins then drained
  • 1 pound prawns cooked, peeled and deveined
  • 1/2 fresh pineapple peeled, cored and chopped
  • 4 ounces cherry tomatoes halved
  • 2 tablespoons cilantro leaves fresh, roughly chopped + extra, to garnish
  • 3 spring onions trimmed and sliced
  • 1/4 cup lime juice
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons fish sauce
  • 2 teaspoons brown sugar
  • 2 cloves garlic peeled and minced
  • 1 red chili deseeded and sliced
  • 1 teaspoon fresh ginger finely grated
