Pineapple And Walnut Cake

  • 2 1/4 cups self-rising flour, sifted
  • 1 1/4 cups granulated sugar
  • 1 (15 oz) can crushed pineapple in juice
  • 1 1/4 cups walnut halves, roughly chopped
  • None None powdered sugar, to dust

Directions

    Preheat oven to 350°F. Lightly grease and line an 8 inch round cake pan with parchment paper.

    Combine flour and sugar. Add pineapple, pineapple juice and walnuts. Mix until combined. Transfer to prepared pan, smooth surface and bake for 40-45 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.

    Dust with powdered sugar to serve.
