  • 2 c. sugar
  • 2 eggs, beaten
  • 2 c. all-purpose flour
  • 2 tsp. vanilla
  • 2 tsp. baking soda
  • 1 (12 oz.) or 1 1/2 c. crushed pineapple, including juice
  • 1 Tbsp. grated orange rind

Directions

    Combine all ingredients, except pineapple and orange rind, mixing well.

    Stir in crushed pineapple and grated orange rind. Pour batter into 17 x 11-inch jellyroll pan lined with well-greased baker's parchment or brown paper.

    Bake in preheated 350° oven for 30 minutes or until toothpick inserted in middle comes out clean.

    Frost while hot with Nutty Cream Cheese Frosting.
