Braised Acorn Squash

  • 1 medium squash
  • 3 cups apple cider
  • 1 1/2 teaspoons butter
  • salt and pepper

Directions

    Cut a medium squash in half lengthwise, scoop out seeds with a large metal spoon and cut squash into 1/2-inch-thick slices.

    Place squash slices in a large skillet, cover with apple cider and add butter. Bring to a simmer. Cover skillet and cook until squash is tender, about 10 minutes. Season with salt and pepper.
