- 3 1/3 pounds chicken cut into pieces
- 2 tablespoons sunflower oil
- 3/4 cup vegetable stock
- 1/4 pound raisins
- 1/4 pound almonds chopped
- 1 pineapple small, peeled and diced
- 1 red onion diced
- cooked rice to serve
Directions

1Season the chicken. Heat the oil in a Dutch oven over a medium heat, add the chicken and brown for 12-15 mins, turning. Pour in the stock, add the raisins and almonds, cover and simmer for 30-35 more mins. Mix in the pineapple and red onion, then re-cover and continue to cook for 35-40 mins. Season to taste and serve with rice.
