Pineapple Bran Muffins

  • 1 c. flour
  • 2 Tbsp. brown sugar
  • 1 c. All Bran cereal
  • 2 Tbsp. applesauce
  • 8 oz. crushed pineapple (undrained)
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/3 c. skim milk
  • 1 egg white

Directions

    Combine All Bran, applesauce, milk and egg white.

    Let stand 1 minute.

    Stir in pineapple, juice and cinnamon.

    Fold in flour, brown sugar, soda and salt.

    Spoon into muffin pans (sprayed with Pam or paper lined).

    Makes 10 muffins.

    Bake at 400° for 25 minutes.
