- 2 eggs
- 1/2 cup butter, melted
- 1 c. white sugar
- 1 c. crushed pineapple, with juice
- 1 tsp. vanilla extract
- 2 1/2 c. all-purpose flour
- 3 tsp. baking powder
- 1/2 tsp. baking soda
- 3/4 tsp. salt
- 1/2 c. chopped walnuts
Directions

1Preheat oven to 350°.

2Grease one 9x5x3-inch loaf pan.

3Beat eggs slightly; add butter and sugar.

4Beat until smooth.

5Stir in pineapple and vanilla.

6In a separate bowl, combine flour, baking powder, baking soda, salt and walnuts.

7Stir well and pour into pineapple mixture.

8Stir to moisten.

9Pour into loaf pan and bake at 350° for 50 minutes.

10Test doneness with a toothpick.

11Let stand 10 minutes before removing from pan.

12Cool completely before slicing.
