Pineapple Bread Pudding

  • 1 stick butter
  • 3/4 c. sugar
  • 4 eggs
  • 20 oz. can crushed pineapple, drained
  • 1 1/2 tsp. lemon juice
  • zest of 1 lemon
  • 1/4 tsp. nutmeg
  • 5 slices white bread cubed without crust

Directions

    Cream butter and sugar, beat in eggs one at a time.

    Add rest of ingredients, then fold in bread.

    Bake at 350° for 50 minutes in a round casserole that has been greased with butter.
