Pineapple Bread Pudding

- 1/2 c. butter
- 1 c. sugar
- 4 eggs
- 1 (16 to 20 oz.) can crushed pineapple (undrained)
- 4 slices white bread, cubed or torn into pieces
Directions

1Preheat oven to 350°.

2Grease a 1 1/2 to 2-quart casserole dish (11 x 7-inch shallow baking dish).

3In a mixing bowl, cream butter and sugar.

4Add eggs, one at a time, beating well after each addition.

5Mix in pineapple with its juice and then fold in the bread pieces.

6Pour into the prepared baking dish.

7Bake until the pudding gets lightly brown on top and firm, about 1 hour.

8Can be served hot or cold.

9Makes about 8 servings.
