Pineapple Bread Pudding Recipe

  • 1/4 c. softened butter
  • 1 pkg. instant vanilla pudding mix
  • 1 teaspoon cinnamon
  • 3 Large eggs
  • 3 c. lowfat milk
  • 2/3 c. coconut
  • 1 (No. 2) can crushed pineapple
  • 1/2 c. raisins
  • 1 teaspoon vanilla

Directions

    Mix the first ingredients till fluffy, then add in 3 Large eggs, one at a time.

    Into another bowl mix lowfat milk, coconut, crushed pineapple, raisins and vanilla.

    Blend into other mix well.

    Cut 8 slices day old bread into pcs and fold into mix.

    Pour into ungreased 2 qt casserole.

    Place in a large pan with 1 inch of boiling water in pan.

    Bake at 325 degrees for 1 1/2 hrs or possibly till knife inserted in center comes out clean.
